3 Easy Car Camping Dinner Ideas

Car camping is such a fun and easy way to spend more time outdoors.
Not only are these camp dinners simple, they’re also super customizable and can easily be scaled to feed a large group!

Car camping is a great way to get outside, spend time with friends and family, and enjoy cooking a simple but delicious meal.
These car camping dinner ideas make things super easy for you, and they’re sure to impress.

2 cups shredded cheddar cheese
8 flour tortillas
1 red bell pepper
1 small yellow onion
1 green onion (green part only), optional
1 Tbs ghee or other cooking oil
Dice the bell pepper and the onion. You can also do this at home to save a step at camp. Just keep the diced veggies in the cooler.
Heat a cast iron pan over medium heat on your camp stove. Add about 1 TBS ghee or cooking oil to your pan.
Add in the peppers and onion. Cook for about 5 minutes until the onions become soft and translucent, stirring frequently. Meanwhile, chop the green onion. Toss the green onion in at the end and cook for about 1 minute more.
Remove the peppers and onions from the pan and set aside.
Turn the heat to low and add a tortilla to the cast iron pan.
Sprinkle the cheese on top and then some of the cooked peppers and onions. Add more cheese if desired. Top with another tortilla.
Cook for about 3 minutes and then carefully flip and cook on the other side for a couple of minutes until the cheese is melted.
Remove from the heat and let it cool for 2 minutes before slicing. Top with salsa and sour cream, if desired. Serve warm!
Bring a small or medium pot of water to boil. You want there to be enough water to roughly cover 1/2 of the food packet when it’s placed inside.
Put the unopened rice packets in the water. Let it boil for about 10 minutes.
Carefully remove the rice packets from the water. Set aside.
Put the Indian food packets in the water and let those heat for 5-10 minutes.
In the meantime, open the rice packets and evenly distribute the rice into 4 bowls.
Once the Indian food packets are hot, carefully remove them from the water, open and pour one packet over each bowl of rice. Serve!
*Make sure you get the Indian Food that comes in a heat-resistant bag that can be boiled. The Trader Joes packets (shown in the video) and the Tasty Bite packets linked above are the only ones I’ve tried.
1 packet taco seasoning mix
1 8oz can of tomato sauce
1 box of taco shells
12oz bag shredded cheddar cheese
1 Tbs ghee or cooking oil
Warm a cast iron pan over the camp stove to a medium heat. Add in the ghee or cooking oil. Add in the ground beef and begin to cook and break it apart.
In the meantime, open the can of tomato sauce.
After about 5 minutes, add in the taco seasoning to the beef. Mix until well combined.
Add in the tomato sauce and mix well. Turn heat to medium-low and let the beef simmer for about 5 minutes.
While the meat’s cooking, get your toppings chopped and ready.
Once the beef is done, assemble your tacos! In the video, I start with cheese on the bottom of the taco shell, then layer on the meat, lettuce, tomato, avocado, cilantro, and sour cream. Enjoy!
