Easy and Healthy Breakfast Tacos for Camping

This camp breakfast is packed with veggies, protein and healthy fats. It’s also completely customizable, so feel free to swap in your favorite veggies, or even add in some bacon.

When I go car camping, I like to have a relaxing slow morning, and that includes taking my time with breakfast as the sun rises.

Breakfast is a meal that people often rush through, but when you’re camping, breakfast can be a time to slow down and enjoy.

Camping always has a way of bringing me back to the simple things, you know?

While this is a simple camping breakfast, it also packs some serious flavor and it will leave you feeling ready for the days adventures.

Simple Breakfast Tacos

Serves: 2

INGREDIENTS

4-6 eggs (usually 2/person is good, but if you’re very hungry, 3/person might be better)
1 bell pepper (I used 1/2 of a red and 1/2 of an orange for color)
1 yellow onion
1 jalapeno (optional)
1 cup shredded cheddar cheese (or a block of cheese cut into a few pieces per taco)
ghee, butter or avocado oil for coating the pan
4 small tortillas or hard taco shells
salt and pepper

cooked bacon pieces

INSTRUCTIONS

  1. Cut the bell pepper and onion into thin strips.

  2. Heat a cast iron pan over medium heat on your camp stove. Add 1 TBS ghee to the pan and then add in the pepper and onion strips. Cook for about 5 minutes stirring occasionally.

  3. If using the jalapeno, slice it and add it to the pan with the peppers and onions. Cook for 3-5 more minutes until the onion becomes translucent.

  4. While the peppers and onions are cooking, scramble the eggs in a separate bowl. Add in a pinch of salt and pepper.

  5. Place the cooked peppers and onions in a separate bowl. In the cast iron pan, add a little more ghee and then add your scrambled eggs. Cook the eggs.

  6. While the eggs are cooking, slice up your cheese and any other toppings you want.

  7. When eggs are cooked, place them in a separate bowl and warm the tortillas in the hot pan.

  8. Assemble your tacos! Layer on the cheese, eggs, pepper, onions and your topping of choice. Serve right away.
