Chop the broccoli and potatoes into bite-sized pieces.
Cut off a large piece of foil for each packet. Divide the shrimp, broccoli, and potatoes evenly between the packets.
Season each packet with roughly 1-2 tsp cajun season and a sprinkle of salt and pepper.
Add 1-2 Tbsp of butter that’s been cut into smaller pieces on top of each packet.
To fold the packets, bring the two longest edges towards each other and roll them together to create a seal. Then, fold in the sides. Rip off another piece of foil. Place the packet seam side down, and repeat the same folding process. Do this one more time for a total of three pieces of foil per packet.
Place the packets on top of campfire coals (not flames), heated briquettes, or a grill set to 425°F. Cook for 30-40 minutes, flipping the packets every 10 minutes until the potatoes are tender and the shrimp is fully cooked.
Open the packets (carefully - the steam will be hot) and serve with a fresh squeeze of lime. Enjoy!
Notes
You can peel the shrimp before or after they're cooked, up to you! In addition to the ingredients, you'll also need heavy-duty aluminum foil, metal tongs or fire gloves, and briquettes or firewood to cook these foil packets.
Cooking times will vary based on how big or small you chopped your ingredients, how big you made your foil packets, and how hot your coals are. If you notice that the coals have cooled, simply bring in some new ones to heat things back up until you hear a faint sizzle sound. You can always take a packet off of the coals and carefully open it up to check on doneness. If it needs more time, simply fold it back up and let it cook longer.
