Pie iron pizza pockets are a delicious campfire meal that’s a lot of fun to make. Melted cheese, crispy and chewy dough, and tons of optional add-ins make this camping dinner a huge hit!
other add-ins such as peppers, onions, cooked bacon, or cooked sausage (optional)
Instructions
Remove the packaging from the pizza dough, coat the dough in a little olive oil so it doesn’t dry out, and then let the dough come to room temperature.*
While the dough is warming up, get the fire going.
Cut 2 small pieces of pizza dough and shape them into squares small enough to fit inside the pie iron. Sprinkle some flour onto your surface if the dough is sticking.
Add a spoonful of pizza sauce and then layer on the cheese and other ingredients such as pepperoni, if using.
Layer on the top piece of dough and then use a fork to crimp the edges of the pizza pocket shut.
Add a small amount of olive oil to coat the pie iron on both sides. Use a spatula to scoop the pizza pocket up and place it into the pie iron.
Cook the pizza pockets over the campfire for about 15 minutes. You want to flip the pie iron frequently to keep an even heat on both sides. I start with 5 minutes on each side and then 2-5 min on each side again after that until I reach about 15 minutes.**
Once the pizza pocket is done cooking, use a spatula to carefully remove it from the hot pie iron and repeat the process with the remaining dough.
Notes
*Cold dough is hard to stretch and shape, so we ideally want the dough to come to room temperature before we work with it. **Cook time will vary depending on how hot your fire is and how close you hold the pie iron to the flames. I suggest you do a test with your first pizza pocket to get a feel for the cooking time and temperature, then, adjust as needed for the rest of them.
