Apple, Cranberry, and Pumpkin Seed Fall Salad with Lemon Tahini Dressing
If you want a fresh camping meal, then this easy fall salad is perfect! Topped with cranberries, crisp apples, pumpkin seeds, and goat cheese, it’s a delicious main meal or side salad.

- Large Enamel Mixing Bowls (I use the smaller bowl while camping)
Ingredients
- 3 oz baby spinach
- 3 oz arugula
- 1/3 cup toasted salted pumpkin seeds
- 1/3 cup dried cranberries
- 1/2 Honeycrisp apple (diced)
- 4 oz goat cheese
Lemon Tahini Dressing:
- juice from 1 lemon
- 1 small garlic clove (minced)
- 1/2 tsp dried thyme
- 2 TBSP olive oil
- 2 TBSP tahini
- 1 tsp maple syrup
- 1/4 tsp sea salt
- fresh black pepper (to taste)
Instructions
At Home:
- Mix the salad dressing ingredients together and store in an airtight container in the fridge or cooler.
At Camp:
- Add the spinach and arugula to a large bowl or 4 smaller bowls.
- Top with the pumpkin seeds, cranberries, diced apple, and goat cheese crumbles.
- Give the dressing a good mix and drizzle over the salad. Serve and enjoy!
Notes
If the salad dressing is too thick, let it warm up a little before serving and it should thin out.
