These Blackstone Chicken Fajitas make an excellent camping dinner! They only need a few ingredients and come together in about 30 minutes. This recipe is great for just two people or a big group of campers. Scale it up or down as needed.
Slice the peppers and onions into strips. Drizzle them with 2 tbsp of olive oil and half the packet of fajita seasoning. Mix well until the spices coat the peppers and onions.
In a separate bowl or freezer bag, mix the chicken strips with 2 tbsp of olive oil and the remaining fajita seasoning. Mix well until the chicken is well coated in the spices.
Heat each side of the Blackstone griddle over a medium heat. Add the peppers and onions to one side and the chicken to the other. Cook, mixing occasionally, until the veggies are tender and the chicken is fully cooked.** Adjust the heat as needed. This usually takes about 15 minutes depending on how big your chicken strips are.
If desired, cut the chicken into smaller bite-sized pieces. Combine the peppers, onions, and chicken on one side of the griddle and turn the heat off.
On the other side of the griddle, heat your tortillas.
Assemble the fajitas - Layer cheese first followed by the peppers, onions, and chicken. Top with fresh cilantro, avocado slices, sour cream, and/or salsa, if desired. Enjoy!
Notes
*Avoid using large cuts of chicken like chicken breasts. They require more time to cook and often cook unevenly. For this recipe, use smaller cuts of chicken like chicken strips or chicken stew meat.**Confirm the chicken is cooked completely by using a meat thermometer. I always have one packed with the rest of my camp kitchen gear.
