This Blackstone chicken fajita recipe is simple to modify. It works well for just two people or a big group of campers. Scale it up or down as needed.

My husband and I recently took a long camping trip in Arizona with our vintage trailer and brought the Blackstone Griddle with us.

We cooked this chicken fajita camping dinner a few times on that multi-week trip and loved them! They’re so easy and satisfying after a fun day outdoors.

Blackstone Chicken Fajitas Gear Highlight

Blackstone Griddle – I have the 22″ On The Go Series Blackstone. This isn’t the smallest or lightest option. But, we like it for longer camping trips or when camping with a bigger group.

Meat Thermometer – I strongly recommend having a small meat thermometer available to test the chicken. I like to know for sure that the chicken is fully cooked.

Spatula – a large spatula is perfect for mixing the veggies and chicken on the Blackstone.

Tips for Making Blackstone Chicken Fajitas While Camping

  • Before you start cooking, gather and prep all your ingredients. Cooking is much more fun when everything is ready to go. You won’t be running around the campsite searching for supplies or ingredients.
  • Want to make these fajitas vegetarian? Skip the chicken or swap it for sliced portobello mushrooms! Cook the mushrooms on the griddle with the other veggies.
  • To make things easier while camping, you can buy pre-shredded cheddar cheese if you prefer. I like to shred my cheese fresh because it does melt better, but this is an extra step you can skip. I use a small course grater like this one when I’m camping and it works great!
  • Avoid using large cuts of chicken like chicken breasts. They require more time to cook and often cook unevenly. For this recipe, use smaller cuts of chicken like chicken strips or chicken stew meat.

Servings: 4 people
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Equipment

Ingredients

  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow or white onion
  • 4 tbsp olive oil
  • 1 oz packet of fajita seasoning
  • 1 pound chicken strips*
  • flour tortillas
  • sharp cheddar cheese (shredded)
  • cilantro (chopped)
  • avocado (sliced)
  • sour cream
  • salsa

Instructions

  • Slice the peppers and onions into strips. Drizzle them with 2 tbsp of olive oil and half the packet of fajita seasoning. Mix well until the spices coat the peppers and onions.
  • In a separate bowl or freezer bag, mix the chicken strips with 2 tbsp of olive oil and the remaining fajita seasoning. Mix well until the chicken is well coated in the spices.
  • Heat each side of the Blackstone griddle over a medium heat. Add the peppers and onions to one side and the chicken to the other. Cook, mixing occasionally, until the veggies are tender and the chicken is fully cooked.** Adjust the heat as needed. This usually takes about 15 minutes depending on how big your chicken strips are.
  • If desired, cut the chicken into smaller bite-sized pieces. Combine the peppers, onions, and chicken on one side of the griddle and turn the heat off.
  • On the other side of the griddle, heat your tortillas.
  • Assemble the fajitas – Layer cheese first followed by the peppers, onions, and chicken. Top with fresh cilantro, avocado slices, sour cream, and/or salsa, if desired. Enjoy!

Notes

*Avoid using large cuts of chicken like chicken breasts. They require more time to cook and often cook unevenly. For this recipe, use smaller cuts of chicken like chicken strips or chicken stew meat.
**Confirm the chicken is cooked completely by using a meat thermometer. I always have one packed with the rest of my camp kitchen gear.
