One pot camping recipes are by far my most popular camping recipes on this blog. And I understand why! One-pot recipes are no-stress camping meals that you can make over and over.
This One Pot Creamy Salsa Verde Chicken and Rice is high in protein and it cooks quickly on your propane camp stove. No fancy camp cooking gear needed.

Salsa Verde Chicken and Rice Ingredients:
Onion and Poblano Pepper – If I’m making this for my first dinner while camping, I like to dice the onion and pepper at home the day before. Poblanos give this camping dinner a little kick. If you don’t want any spice, use a green bell pepper instead.
Chicken Stew Meat – This is just chicken breast cut into bite-sized cubes. It’s sometimes labeled as chicken stew meat at the grocery store. If your store doesn’t have it, you can simply dice chicken breast yourself. This is something I prefer to do at home beforehand.
Salsa Verde – We use one small 7 oz can of salsa verde in this recipe.
Sour Cream – This is what makes this camping dinner so creamy!
Cooked rice packets – Of course, we’re going to use cooked rice packets to make things so easy at camp! If you don’t want to buy rice packets, cook rice at home. You can store it in the cooler until you’re ready to use it in this meal.
Homemade Spice Mix – Make this spice mix at home so you don’t have to pack a bunch of spices. This mix has cumin, chili powder, garlic powder, paprika, coriander, salt, and pepper.
Toppings – Top this meal with fresh cilantro, green onions, and avocado. I add these three ingredients to almost everything :)

Camp Cooking Gear Highlight
You don’t need a lot to make this camping meal. Here’s the main gear I use:
- Stainless Steel Pot – I use the large pot from this Primus stainless steel set. I love this pot set because you can use it over the camp stove and over the campfire.
- Propane Camp Stove – I’ve been using the Camp Chef Everest stove for years and love it.

How to Make this One Pot Camping Dinner
This camping dinner starts with a little prep at home. Mix your spices at home and store them with the rest of your camping food. I use these small Humangear containers for my spice mix.
If you plan to cook this dinner soon, you can dice your onion and pepper at home too. Store them in the cooler.

At camp, heat your pot over medium heat. Add a dash of olive oil, followed by the onions and peppers. Cook for a few minutes, mixing frequently.
Next, add in the chicken and spice mix you made at home. Mix well and cook until the chicken is fully cooked.

Mix in the salsa verde and simmer for a few minutes; then mix in the sour cream.
Lastly, add the cooked rice. Mix well and cook until the heat warms the rice, just a minute or two. Serve with fresh cilantro, green onions, and avocado.
