One-Pot Pineapple Teriyaki Beef and Rice

I love easy one-pot camping dinners. They are, by far, the most popular on this blog!

For this one, we use pre-made teriyaki sauce, cooked rice packets, veggies, and a protein to make a filling meal with loads of flavor in less than 20 minutes.

The cooked rice packets are one of my favorite camping food hacks. There’s no need to dirty another pot and wait for rice to cook. These packets are easy to find at grocery stores.

If you prefer, you could make rice at home and store it in the cooler. This is definitely a cheaper option. I like the convenience of the rice packets, so that’s what I usually go with.

Pineapple Teriyaki Beef and Rice Ingredients:

  • Ground Beef – You can swap in ground chicken or turkey if you prefer.
  • Broccoli and Red onion – add some veggies in!
  • Pineapple – I like to dice up a fresh pineapple at home and store it in my camper fridge. You only need about 1 cup of diced pineapple for this recipe. If pineapple is not in season, you can try using canned pineapple instead. Look for an 8 oz can of pineapple chucks.
  • Teriyaki Sauce – Since this is where a lot of the flavor comes from, choose a high quality teriyaki sauce. I really like the sauces by the brand 3 Dragons that I find at Whole Foods. Sauces by the brand The Ginger People are also really good!
  • Rice Packets – Pre-cooked rice packets are how we keep this a one pot camping dinner! I use two 9 oz rice packets or one “family size” packet in this recipe.
  • Toppings – Top this camping dinner recipe with fresh cilantro, diced avocado, and sesame seeds.

Ingredients
 

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 head of broccoli, cut into smaller florets
  • 1/2 red onion, diced
  • 1 cup chopped fresh pineapple (or an 8 oz can of diced pineapple)
  • 12 oz jar teriyaki sauce (you only need about 1/3 of the jar)
  • 2 (8 oz) rice packets (or one "family size" packet)

Toppings:

  • fresh cilantro, chopped
  • sesame seeds
  • avocado, diced

Instructions
 

  • Heat a pot over medium heat. Add a splash of olive oil to the pot, followed by the beef. Brown the beef, breaking it apart as it cooks.
  • Once you cook the beef, add the broccoli and red onion. Cook for a few minutes until the broccoli becomes tender, about 3-5 minutes. Then add the diced pineapple and mix.
  • Break apart the rice packet before opening it to prevent large clumps of rice. Add the rice and the teriyaki sauce to the pot. I add about 1/3 of the jar of teriyaki sauce, but you can add more or less to taste. Mix well and let the sauce and rice heat up for a few minutes.
  • Serve with fresh cilantro, avocado, and sesame seeds. Enjoy!

  1. I ran across one of your YT videos last week, then cave over here just in time for my Memorial weekend meal-prep.
    Your one-pot teriyaki pineapple & beef was a big hit with my kids, and the rice packets were a great idea. I’ve walked past them so many times, but have never purchased them. They definitely saved time, which is important when camping.
    This is the only one I worked into my plan for this trip, but I know by summers end I’ll have made another dozen or more.
    Oh yeah, definitely going to hit-up IKEA next time I’m near one.

    Easy to make and this made a lot of food. We ended up having enough for leftovers the next night as well. This was so good I would put it in my rotation at the house and not just camping.

    Only change I made was a yellow onion since I had it on hand and only used one package of rice. We used sweet baby rays teriyaki sauce.
