One-Pot Thai Peanut Chicken and Rice

One pot camping meals are my favorite! This Thai Peanut Chicken and Rice is the perfect high-protein dinner for camping. It takes just 20 minutes to make.

It’s a one pot camping recipe, so there’s minimal cleanup, and it’s easy to scale up or down depending on your group size.

Here’s what you’re going to need…

Thai Peanut Chicken and Rice: Main Ingredients

Chicken breast – cubed chicken breast is the source of protein in this recipe. I cut the chicken breast into bite-sized pieces at home (or buy it that way) so that I don’t have to handle raw chicken at camp.

Thai red curry paste – This store-bought curry paste is where we get so much flavor. I usually use the Thai Kitchen red curry paste. It’s cheap and easy to find at any grocery store.

Soy sauce – for a little salt and umami flavor!

Peanut butter – Peanut butter makes this camping meal so delicious and extra creamy!

Powdered ginger and garlic – I love ginger and garlic! We use the powdered versions in this recipe. If you’re cooking at home or don’t mind an extra step at camp, use fresh garlic and grated ginger instead.

Pre-cooked rice packets – This is my camping food hack for easy one-pot meals. The rice is already cooked, so all you have to do is break it apart and add it to the pot.

Toppings – I add fresh chopped cilantro, salted roasted peanuts, and green onions to this camping recipe. So good!

Can I make this camping recipe at home, too?

Yes! I know this blog focuses on camping recipes, but you can also prepare this dinner at home. It’s perfect for when you need a quick weeknight meal.

When I make this at home, I love to use fresh garlic and fresh ginger instead of the powdered versions that I use when camping. It’s just a tiny bit better!

How do I store leftovers at camp?

I like to pack these silicone collapsible containers for my camping trips. When not in use, they don’t take up much space. They’re great for camping leftovers. Store any leftovers in the cooler or your camper’s fridge for an easy camping lunch the next day!

Ingredients
 

  • 1 tbsp olive oil
  • 1 lb chicken stew meat (chicken breast cut into bite-sized pieces)
  • 1 tbsp Thai red curry paste
  • 1 tsp ginger powder
  • 1/2 tsp garlic powder
  • 3 tbsp soy sauce
  • 1/4 cup peanut butter (natural unsweetened)
  • 1/4 cup water
  • 8 oz cooked rice packet*

Toppings

  • cilantro, chopped
  • salted peanuts
  • green onions, chopped (aka scallions)

Instructions
 

At Home (optional):

  • At home, measure out and store the powdered ginger and garlic together in a small container so you don't have to pack the large spice containers.

At Camp:

  • Heat your pot over medium heat. Add the olive oil, followed by the diced chicken. Cook for a few minutes, mixing occasionally until the chicken is golden and fully cooked.
  • Add the Thai curry paste, ginger, and garlic. Mix well and cook for a minute. Next add in the soy sauce, peanut butter, and water. Mix well.
  • Lower the heat and simmer for a few minutes, mixing frequently. Add a splash more water as needed if the sauce becomes too thick.
  • Break up the rice packet before opening. Add the rice to the pot and mix. Cook until the rice is heated throughout.
  • Top with fresh cilantro, green onions, and salted peanuts. Enjoy!

Notes

*This might make more than 2 servings for you. My husband eats a lot of protein, so for us, there are no leftovers when I make this meal. You can add more rice to stretch this meal to more servings.
