BBQ Blue Cheese Burgers

In the summertime, burgers are one of my go-to dinners. They’re a quick camping meal that never disappoints. Sometimes a basic cheeseburger hits the spot, but if you want to change it up, these BBQ blue cheese burgers are excellent. Let’s dive into the recipe!

I first made these burgers at a campground in South Dakota.
Nick and I had an action-packed day hiking and boating in Custer State Park and these burgers REALLY hit the spot that night!
With only 6 ingredients, these burgers are a crowd pleaser and ready in about 20 minutes!

How to Make BBQ Blue Cheese Burgers
Here’s what you’ll need:
- Ground Beef – I usually use 80/20 ground beef. The fat makes the burgers so juicy and delicious, but if you prefer, you can use leaner beef.
- BBQ sauce – I just pack a jar of BBQ sauce in the cooler.
- Blue Cheese Crumbles – Another easy component that gets stored in the cooler.
- Gruyere cheese – Gruyere cheese was something I thought to add last minute and I’m so glad I did. It really takes these burgers to another level. If you can’t find Gruyere, I think Swiss cheese would also work.
- Sweet Onion – I love the grilled onions on these burgers!
- Hamburger Buns – Whatever hamburger buns you like.

BBQ Blue Cheese Burger Assembly:
You only have to cook the onions and the burgers, the rest is in the assembly.

Grilling the Onions:
- I like to start with the onions. Slice the onions into rounds that are about 1/2 an inch thick.
- Grill them over the fire for a few minutes on each side until they develop some color and the onions soften. Use a spatula to easily flip the onions and prevent them from falling through the grill.
- Set the onions aside on a plate when they’re done.

Grill the Burgers:
- Next, form the burgers. Grill them for about 4-6 minutes on each side depending on how well done you like your burgers.
- Add the sliced Gruyere cheese to the burgers during the last few minutes of cooking. Sometimes I’ll lightly tent the burgers with aluminum foil to help the cheese melt.
- Once the burgers are cooked and the cheese is melted, remove them from the grill.



Add the Toppings:
- Place the burgers on hamburger buns. Top with a dollop of BBQ sauce, a LOT of blue cheese crumbles, and a few grilled onions.
- Serve immediately!

BBQ Blue Cheese Burgers
Ingredients
- 1 pound ground beef (80/20)
- 1 sweet onion
- 4 slices Gruyere cheese
- 1 jar BBQ sauce
- 5 oz blue cheese crumbles
- 4 hamburger buns
