One of the things I remember the most is how prepared and creative my mom was when it came to the camp food.
One time, she baked me a birthday cake at camp in a tin foil dutch oven that she made!
This was before Pinterest, and before main stream Internet and blogging.
Camp cooking seemed like a fun and creative challenge for her, and she always impressed everyone with the food she managed to put together while camping.
Turns out, I think it’s a fun and creative challenge too!

Easy Camping Lunch and Snack Ideas
For lunch, I love to keep things simple and pack a bunch of sandwich stuff: lunch meats, cheese, a loaf a bread, lettuce, tomato, mayo, and mustard.
Put it all in the cooler, and you have lunch that’s quick and crowd-pleasing.
I also love to wash and chop some carrots at home and pack them in the cooler with hummus for a quick snack, or as part of a lunch.

Another healthy camp dinner idea that I make a lot is a salad. Sometimes when you’re camping and eating lots of packaged foods and snacks, it’s nice to have some fresh veggies.
I pack chopped and cleaned lettuce, cucumbers, tomatoes, and any other salad toppings in the cooler with some dressing. At camp, all you have to do it assemble.
If you have a fire, you can even grill some chicken and throw that on the salad for a complete meal.
Sometimes, I bring the pre-cooked chicken sausages, fry them in a pan at camp, and add them to my salad from some quick protein.
Easy Camping Dessert Ideas
Of course, smores are on this list! In the video above, I did a little twist on classic smore and used a chocolate peanut butter cup instead of plain chocolate. It was awesome!
I pretty much always bring bars of chocolate car camping for a quick dessert.
Keep them in the cooler during the day so they don’t melt in the sun.
